In the food industry the water activity value (aw) designates the equilibrium of humidity determined by the partial water vapour pressure on the surface of the product. The aw value depends of composition, temperature and the water content of the product. The aw influences certain quality characteristics of the product such as the growth of micro-organisms, the percentage of proteins and vitamins and the sensory characteristics such as colour, smell and taste.
Set AW The ms-1 AW is a portable measuring system for determining the water activity value of food products. Temperature and AW are shown simultaneously on the large display. The plate sensor enBSK-3 is supplied with an electrolytic measuring cell for accurate humidity measurement.
